I just came up with this one and it turned out pretty good. I have a few other favorites that I'll post when I have a chance.
Chickpea-Tomato Kale with Brown Rice
Ingredients:
Olive oil
1-2 cloves garlic, minced
1 can chickpeas, drained and rinsed
1 can diced tomatoes, drained
Several handfuls fresh kale, washed and chopped
Salt
Red pepper flakes
1 cup brown rice
2 cups water
Directions:
Cook brown rice in the water in a rice cooker or on the stovetop. When there is about 10 minutes left on the rice, heat oil and garlic in a large skillet. As soon as garlic becomes fragrant, add the chickpeas and tomatoes. Stir around a bit and add some salt and red pepper flakes. Adjust heat as needed. Add kale, a handful at a time, allowing each layer to wilt a bit before the next addition.
When rice is done, combine with kale mixture and serve.
