Many years ago, when the cupboard was almost bare and the pocketbook even barer, I put a couple cans of stewed sliced tomatoes into a pot and added fresh catfish (I think chunks, or else I cut it into pieces). I'm sure I added other spices/herbs as well. Served over rice after the fish 'stewed' for a while. WOW was that good!

This became a staple (with variations depending on whatever I had in the house - I specifically recall include adding sliced black and/or green olives, capers, sauteed onions, black beans... I'm sure I tried baby clams as well. It was always good!)

It'd be good over pasta, too, but there's something about tomatoes and rice that is very appealing to me.
