By noodley, do you mean crunchy? If so, lots of us SOTC (scrunch out the crunch) when our hair's completely dry. Gel will most like always "crystalize" our curls, and that's the point -- so the gel holds our hair's shape. But when it dries, you can flip your hair over and scrunch it lightly to get the crunch out. Then your hair will appear much more natural and flowing, and not hard as a rock!
