Could it be that she used table salt which turns them a dark, muddy color?

Pickled watermelon is awesome. Forget the pickled rinds, just the pickled watermelon flesh!

Kasden, I made them yesterday and there are only three left after eating some yesterday, my mom taking a bunch of them to work today, and me eating some more today.
