Some people are just more prone to build-up than others. It might be another chemical in your products that's weighing you down. I can't touch any with polyquaternium in it, or my hair just falls flat.
Also, if low-pooing turns out to be too drying for you (it is for me, or at least I haven't found one that gives me good results), I suggest adding a bit of baking soda to your conditioner for your cowash. Aside from offering gentle cleansing, it also gives your scalp and hair the friction it needs for the conditioner to rinse clean.
