Both essentially the same thing. Bread soaked in custard. Bread pudding is sweeter and often richer though, since French toast is usually served with something else (like that delicious honey and lemon Greek yogurt we used to serve with it).
Spring, you need a good sturdy bread (challah, panettone, brioche, good pan de mie) that has been left to stale for a few days, and then soaked thoroughly so it's completely custardy inside, with a good caramelized crust from slow even cooking.
