Mr. Spring also picked up Inverness, which was SUPER gooey soft and very earthy. I'm still deciding if I like it. They also suggested some sort of cloth wrapped hard Cabot cheese (we haven't tried yet) that "compliments the Mt. Tam nicely", whatever that means.
