When I first went CG, my hair kinda freaked out too. It knotted really badly, especially at my nape, and would frizz. I was using a low poo, a CG rinse out conditioner, and Deva's ArcAngell gel. After about 3 months, it finally stopped tangling. Not sure why, maybe it finally got to a perfect moisture level. I wasn't doing anything differently. I was applying my rinse out and detangling in the shower with my fingers as usual. So who knows...
After 3 months I felt confident enough to start adding in other products. I started raking in AG Re:Coil before applying gel. That seemed to help with clumping. Then I decided to try a different gel because the wheat in the ArcAngell was making my face itch (allergic) and switched to Aussie Instant Freeze. Similar hold, but less flaking. Yay! Then I added Curl Keeper. EUREKA! No more frizz! So my routine now is low poo, rinse out, rake in 2 half dollars of Curl Keeper, rake in a quarter of Re:Coil, scrunch in a quarter of Aussie Instant Freeze, pixie diffuse, clip, air dry, SOTC. No knots. No frizz. Good second day hair. And literally for my second day hair, all I do is take out my pineapple, bend at the waist and shake my hair out. I very rarely have to spritz it with anything. Photos below show day 1 and day 2 hair this week. Red shirt is day 1. Gray shirt is day 2.
So I guess the moral of the story is keep at it... The tangles and frizz may go away depending on product and moisture levels. Try using a leave in conditioner if you aren't already using one. Could definitely help with both of your problems.
