I would consider a cleansing conditioner like Curl Junkie Daily Fix or DevaCare (not DevaCurl) No-Poo. Super gentle but they both contain coco betaine which can remove cones. There are also gentle sulfate shampoos out there. I'm hooked on Curly Hair Solutions Treatment Shampoo, but for protein sensitive hair Redken Fresh Curls is a great gentle alternative. I've actually found most of the sulfate-free shampoos I've tried to feel more stripping than these. And yes- moisturize, moisturize, moisturize.
