Sciencey Question

This is probably a series of stupid questions, but I've been curious about this for a while! Maybe you wavy ladies can help me out.

Why, exactly, do certain people have issues with certain ingredients? Not protein, I get that, but other things. Why did my hair used to hate shea butter? Why can't certain people use glycerin? It's not even relevant to their hair type, it's just individual hair "preferences." Is there a reason as to why this happens, or do we not know?
whurly girly (2C/3A).
thick; medium/coarse; low porosity.
hair that is drier than the sahara desert.

LOW-POO: Renpure Organics
CO: L'Oreal EverCreme Cleansing Conditioner
RO: Renpure Keratin Conditioner. New HG!
LI: L'Oreal EverSleek Humidity-Defying LI Creme
Styling: SM Curl Milk, Argan Oil for sealing, sometimes GFPC Gel, some honey for hold, TIGI Control Freak Serum!!
It could be porosity issues...some ppl's hair is more porous than others. It could be bc of the difference between fine/coarse hair.
2yrs 7 months post relaxer/2 years and 11 months natural

Cleanse: SM Moisture Retention or Suave Naturals shampoos
Co-Wash: Suave Naturals, L'Oreal EverCreme or EverCurl
RO/Detangler: Tresseme Naturals, GVPCB
Leave-In: SM Curl Enhancing Smoothie, TN, GVPCB
Styler: EcoStyler, GF Pure Clean gel, KCCC

Just discovering my hair likes protein!

All kinds of reasons! Hair can be more/less porous, more/less dry, finer, coarser, denser, more sparse, more or less fragile, more or less elastic, etc. There are so many variables.
