Default new 2b needs help!

Hi everyone,
I am new to CG and have a lot of questions, any help or advice you can offer would be greatly appreciated!
I believe I'm 2b, some parts of my hair look 2c but the wave doesnt' start at my crown in most places. It tends to curl more at the bottom (or the bottom half) the longer it gets; when I've chopped it short before it has seemed less curly, though perhaps I just never figured out how to style it.
I've been doing CG since January (using DevaCurl no-poo, one condition, angel, and AG Recoil), and at first I was excited about my results. There was a lot more definition to my waves, and the back of my head which has always been less curly was curling up. I have more curly hair on the sides and underneath layers.
However, after a couple of weeks I noticed my hair seemed limp and flat. I tried washing it with a sulfate shampoo again since I suspected build-up, and it did help. Why am I having build up if I'm using all water soluble products? Do other wavies find that low-poo (maybe once every two weeks or so) is better than no-poo?
Also, I'm still having a problem with my curls falling out. They look great at first, especially if I used sulfate shampoo recently, but then after it dries and I scrunch the crunch out of my gel they tend to fall out quickly. Maybe my products are weighing my hair down? Is my hair getting too moisturized or not moisturized enough? I have rarely done a leave-in conditioner, afraid I would weigh it down.
To dry my hair I've been plopping and then air drying.
My hair is sort of medium fine and pretty long, goes past my shoulders. I think low porosity, it's healthy I never flat ironed it or dyed with chemicals. Generally feels soft and is pretty shiny. I have been dying it with henna which acts like a deep conditioner, I've never done an oil or protein treatment.
Mostly I would like help with helping my curls stay in longer and dealing with the build up.
Any advice??

I'd say if you are medium fine, you probably need to do a protein treatment. My hair gets like that when I don't use enough protein. I have to use some with every wash. My hair loves protein.

Thanks for your suggestion! I will try some protein, do you recommend a protein treatment or just some product with a little bit? I've read some horror stories so I'm a little afraid to try it...
Also, any advice on the build up problem?

If you otherwise like the Deva products, I would try the Ultra Defining Gel. AnGel (aka Light Defining Gel) doesn't have a lot of hold and many of the waives I know get much better results with stronger hold gel.
Co-wash/No-poo vs low-poo is one of the other things you can definitely play around with. People with thinner or finer hair often need to rotate in a low-poo at least once in a while. And I do second the protein treatment suggestion.
ETA: Deva products contain a decent amount of protein, so you would know if you were protein sensitive.

Thank you!! So helpful to hear the advice. I was reading some other posts too, I think I'm going to play around with the following:
- stronger hold gel
- a consistent low-poo routine
- mousse instead of gel (lighter for finer hair?)
- protein treatment
- perhaps try different product application and drying methods

I'll let you all know how it goes.
Any other suggestions?

Update: I did a protein treatment with gelatin and began using devacurl ultra gel - great results so far! I will PT again and the gel is giving me second day curls when I pineapple. I'm really seeing 2b 's' waves and my loose ringlets are holding now instead of falling out.
I've also discovered pixie diffusing works for me.

Hooray! I'm so glad to hear you're seeing better results. I know Deva products in general sometimes get bashed around here, but I do love this new gel. I also belong to the FB wavy hair community and there are a number of ladies there who also love it.

Most of us fine hair ladies...NEED some kind of protein for their hair...my hair was the same...I think when we first start CG...our hair is sooo dry...it wants moisture at first...but then we get overconditioned easily...and this is where finding your hairs balance is key....if I have the right moisture/protein balance...then it really doesn't matter what ""stylers" I use...my HG protein product right now is Aubrey organics GPB conditioner....I use it every time...and great AWESOME results....and I cleanse my hair at least weekly...I have horrible hard well water...which can cause some nasty buildup on my hair...ugh
