It took my hair a while to adjust. I didn't have any oiliness problems when I went CG, but it did take time to figure out what my hair liked and the best ways to style it.
The top part of your hair (known as the "canopy") is a problem area for many. It is the most exposed to the elements and bears the brunt of heat styling, so it will take a while for it to get healthy. Mine was dry and straight for quite a while, though it is finally looking better (I've been CG for 9 months now).
I would recommend doing regular deep treatments to get moisture back into it. If your hair is fine and/or porous, you may want to do a protein treatment.
As far as holding the curl, what kind of styling products are you using? Most wavies find a good hard-hold gel such as Biosilk Rock Hard Gelee or LA Looks Sport Gel works well to keep the curl shape all day.
I know it's all overwhelming at first, but read through the forums and experiment. You'll find out what your hair likes and dislikes.
