It goes for any blender that you should start with relatively little liquid for smoother results and you should start slow then crank it up.
There's very little need to use the high setting on a Vitamix unless you're making certain kinds of purées. I've only ever had to use it one or two times in all the restaurants I've worked in. Highest on variable is plenty for most things.
