Homemade chicken cordon bleu (no bread coating to make it gluten free, it had a garlic infused oil and oregano seasoning though), with seasoned pan-fried potatoes and red bell peppers, and butter lettuce and cucumbers with a pomegranate balsamic vinaigrette. I ate too much and I think I may have undercooked the chicken just a tad (would bake it 40-45 mins next time instead of 35 min), but it was delicious.

I'm starting to get the hang of this 'cooking' thing. Too bad I'm too damn tired during the week!
