Default foggy, humid day = GREAT hair. Why?

So my hair LOVES humidity. Never frizzes. I just get a GREAT curly hair day. So why? And how can I get this type of hair when it's dry out? Even my husband commented and said, "what did you do to your hair toay? It's so curly." ha, ha.... HUMIDITY outside
But when it's dry out, I get limpy curls.
I just got the curly girl book (yeah, I'm a bit late). My stylist keeps telling me to get a copy and I finally did. Some of the stuff I can't do like drench it in conditioner. I'd get oily looking hair. Unless I"m using the wrong condish.
I've tried the deva low poos and no poos and hated them. My hair felt coated and gooey after a while and my scalp itched like mad.
