Here is me putting on my old plastics engineering cap
I think that boiling the gel too long or at too high a temperature after it is strained can break down the polysaccharides (polymers obtained from boiling the flaxseeds). This is my hypothesis because it was nice and goopy/thick before I started it boiling again.
I think the trick is to just keep it hot enough to mix in the add-ins, but not to actually boil it again. I am going to try again later.
My second batch came out awesome! Can't wait to try it out
