There are a few things that come to play here. Many of us rotate products. My hair always satiated on products, even in my shampoo/conditioner only days. I wet, use a rinse out and style every day. Seldom let myself use any one product more then once in five days.
The best way to choose ingredients/products is by hair properties. Here's a link to help you with yours

Once you know your properties, you can look for folks with hair like yours and see what they use (in signatures.) It's the best place to start.
My hair loves protein, so that's the way that I would counteract overconditioning. You could shampoo or use a less moisturizing conditioner. IMHO, I don't think that's what would be best for your hair.
