You'd probably need just a quarter to at most half a vanilla bean for a batch.
One of my favorite batches of oats was topped with a vanilla bean, pecan, maple and bourbon butter I mixed up.

I love cardamom and it's great with citrus and ginger in particular. I make a rhubarb compote spiced with it that I've used with oats and with yogurt.
