I can't tolerate wheat protein at all, but ironically wheat germ is okay. Maybe it's not a protein? My hair likes keratin the best, but it can tolerate soy, oat or silk protein if it's at or near the end of the ingredient list. I have to be careful how much I use though. If I alternate with moisture heavy, protein free products then that works best. After I first realized I was protein sensitive, I really had to focus on using those protein free moisture products for a few months before my hair recovered. Now I have been able to add some protein in small amounts, but I am very cautious. I am constantly switching up my rotation and have found some products that I love.....but I have a ton of products in my arsenal that I can't use. I'm currently learning the art of swapping....
