I'm really obsessed with making this cake. Everything works. Pink peppercorns are great with berries. Lychees, raspberries (or strawberries for that matter), and passionfruit are all floral. Lychees are sweet and mellow, with passionfruit and raspberries providing a nice tart counterpart. Italian meringue is light and fluffy for a cake that isn't weight down, and the passionfruit and raspberries will work well with the sweetness. Why can't I be home already?!
I can get the lychee puree ordered through work, though I might just get it myself so I can have it shipped right to my house. Of course, then I'll have a ton of lychee puree, but that just means lychee and strawberry swirl semifreddo.
