So I wanted to share some foods and recipes that I have been making and eating for over 3 years now. I started the low carb diet in the summer of 2010. I lost over 80lbs by exercising and eating right! When on a low carb diet you have to watch out for how many carbs you are eating. I mostly stuck to deli meats, protein shakes + bars, eggs, cheese, red meats, etc. I cheated on the weekend sometimes, but during the week days I would not touch any junk food. It was hard at first to maintain this diet, but after awhile I got used to it and now I feel great. I also workout everyday by doing the Tae Bo basic workout. I have been sticking with that for awhile and I do see and feel results. Anyways for some low carb recipes I have, they are REALLY good. Every week I make a batch of "Cream cheese muffins." And what you need for that is;
2 8oz pkgs of cream cheese
1tbsp Vanilla Extract
1 cup of splenda. (Or whichever you prefer)
Make sure you preheat your oven to 350 degrees. Set up your baking cups. Then combine all the ingredients together in a mixing bowl and mix them until they are all combined together. Note** your cream cheese should be softened before putting it in the bowl. It will be easier that way. If its not softened then you can put it in a microwave safe bowl and cook it for a minute, and that should soften it up.
After you have all the ingredients mixed together then you can simply use a spoon too scoop the mixture into each baking cup until you've used it all. Then once that is done you put it in the oven for about 20-25 minutes. Once they are done let them cool for 2 minutes and then enjoy! They are delicious! They can be eaten with jelly or by themselves.
My next recipe that I loveeeeee are called Peanut Butter Cookies. Super simple to make! All you need is;
1 cup of peanut butter ( I use crunchy )
1 cup of splenda ( Or whatever you prefer )
1 tsp of Vanilla Extract
Preheat your oven to 350 degrees. Make sure you have a greased cookie sheet or whatever you prefer to use. Combine all the ingredients together in a bowl and mix. Once everything is nicely blended together then take out a walnut sized ball and roll it and put it down on the sheet and you can either use your thumb or a fork, and simply press it down in the middle of the cookie. Once you are done with all of them, put them in the oven to bake for about 15-17 minutes. Once they are done let them cool for 2 minutes. NOTE ** they might be a bit crumbly but they are DELICIOUS and very peanut buttery. My mom says they taste great when she dips them in her coffee! Also another note** I use crunchy peanut butter because its easier to swallow. I tried the creamy in the recipe and it was difficult to swallow because it was stuck to the roof of my mouth.
My third recipe that is sooooo addicting is called Pepperoni Chips. Again another super simple snack to make. If you like pepperoni, I HIGHLY recommend you try this. All you need is pepperoni. I use Sandwich pepperoni. All you do is take two paper plates, put a paper towel on one plate and put about single pepperoni slices around the edge and one in the middle (if your using the smaller slices then I believe you can fit 10 or so). After that place the other paper plate face down on top and put it in the microwave for about a minute and 15 seconds. They will cook and you will hear a popping noise, once they are done BE CAREFUL taking them out as they will be hot! Remove the paper place on top and carefully take the pepperoni chips and place them on the plate. Then VOILA you've got pepperoni chips and they are delicious! But mind youu they are a super salt bomb so make sure you are drinking something when eating them! Anyways I hope you enjoy! I'll be back to post up more recipes (:
