Shampoos are a hard one...I am having a difficult time there myself...I presently have got a protein-overload and so have been doing my research!
Are natural products okay? I do tend to be wholistically-oriented so please bear with me on that one.
Paul Penders does a Jasmine Shampoo sans protein and the conditioners and three other products as done by them are free of all protein, sulfates and then some. They are completely natural.
Aubrey Organics (also all-natural) does one leave-in which is free of anything you do not want and two conditioners as well. Here are links to all of the above. As for shampoos, there is only one protein-free one and it is a clarifying formulated to treat scalp conditions and so, I cannot suggest it. I hope this helps:

I have used Aubrey for all my beauty needs for years and have to say that most of their hair products are rife with proteins. The ones I have always used are. I am presently trying out the white camellia-imbued conditioner (I did
deep condition with it however) and either I got too much, or it is supposed to make hair feel this
greasy. Just wanted to tell you that a little goes a long way as to it. Am not fond of the aroma either but I am not a fan of flowery fragrances.
I may try out the Paul Penders Lemon Conditioner for one to cleanse with, however.
I have been online for 12 hours in the past few days combing the proverbial world wide web for what you are looking for and then some! As I am a 'natural girl' I might be having a harder time than you on this one!
