Plant oils are the same type of thing as you eat/ cook with - the greasy liquid squeezed out of olive fruits (olive oil), coconut meat, sunflower seeds, rape seeds (canola oil), almonds. It's a plant extract and it's made up of molecules called fatty acids.
Argan oil is from the kernel/ seed of the argan tree found in north Africa, Moroccan oil should be the same thing but most often it's a tiny bit of argan oil and a pile of silicones.
Different oils have different properties depending on which fatty acids they contain. Oils that are proven to penetrate the hair include coconut and olive, this is because the fatty acids they contain (lauric and oleic) are very small and straight. Oils that cannot penetrate the hair include regular sunflower because the fatty acids it is rich in (linoleic, a polyunsaturate) is a wonky shape and quite large so won't slip under the hair cuticle.
All oils act as a partial barrier and coat the surface providing slip and shine on dry hair, or help the hair hold a little extra water if used on wet or damp hair. In and of themselves oils are NOT moisturising, they do not add or increase water when used alone.
If the oil can penetrate it can reduce the porosity of the hair (help it take up less water so not swell and frizz), increase elasticity (make hair more flexible). Coconut oil can also help the hair hold onto more of its natural proteins (protein loss = damage) so keeping it stronger and healthier over time. Other oils that probably have the same properties as coconut oil include palm kernel, babassu and tucuma butter because these are all rich in lauric acid.
