Squeaky Hair with Gel

I condition and then apply my leave-in (KCKT or CJ Smoothing Lotion), but when I add in my gel, which is Ecostyler Argan and Olive Oil, my hair feels squeaky like it has been stripped. I don't get it because I used to have clumpy curls and now they are stringy and then. I have the squishy, seaweedy feeling up until I add my gel. It seems to be happening with most of my gels too, not just the Ecostyler. What could be the problem? Is this protein sensitivity?
My hair is naturally a combination of 3B/3C. No longer texturized. All natural! CG Routine: Devapoo, One condition or Elucence. Loving curl creams: AG Recoil, Mop Curl Cream, KMS Curl Cream and never without CK. Gels: HE SMU and KCCC with a little BRHG on top.
What is your porosity? If it is low, this could be the products sitting on the hair shaft instead of penetrating, causing build up. You might have to clarify your hair. The next suggestion is to experiment with products besides gels. Maybe they just don't agree with your hair. You could try creams, cream gels, mousses, etc. Also check the ingredients for harsh alcohols. You might be protein sensitive so avoid proteins for a while as well in order to tell. Maybe clarify, avoid proteins, see what your hair looks like, then add protein, observe again, then clarify again (giving yourself time in between so you don't strip your hair), and then try switching up your product. See what gets you the best results. I'd write it down in a little journal.

I see the protein in Ecostyler is wheat protein. Do you have problems eating wheat? I have a nasty effect from wheat protein (gluten). Maybe your hair just doesn't like it. Or maybe your hair just doesn't like gel period. Try going gel free for a few days and see how your hair reacts. I'd also try a more conditioning leave in... do you leave some of your regular conditioner in your hair? You could try clarifying if that doesn't help.
Thanks for your responses! I have always used gel because I like stylers that have a harder hold. My hair needs the weight or it will shrink up to my ears. I am investigating cream gels ( specifically Darcy's Botanicals), but for now I will try clarifying.

I had this happen to me about a year ago and I was using too many products with Glycerin. Washed hair with a sulfate shampoo and started using only products without glycerin. Some good ones are Curl Junkie. I also did a protein DT followed by a moisture treatment and my hair came back to normal in about 2 weeks. I then was careful to mix products with glycerin and no glycerin as not to get glycerin overload again. Just a thought.

Try making sure your hair is soaking wet when applying. I know if my hair is damp to dry when applying gel, the crunch monster is out looking for me.....or it could be ecostyler altogether. I stopped using it. I like the Shea Moisture Curling Souffle.
