How do soy, oat, and quinoa protein and vegetable cellulose qualify as synthetic thickeners?

I can see how they take some processing to extract so maybe that's where their coming from. But I remember seeing a list like this once and I'm pretty sure they had the chemical name for salt listed as synthetic.
