The gel that forms from the chia seeds is gelatinous (like Knox gelatin) feels like thick water. Whereas I think the gel from flax seeds is more like an egg yolk, kind of tacky. The flax seeds seem to release from the gel easily for the most part. You know how flax seeds harden up in the pan if you don't rinse immediately, chia seeds rinse away easily.
