OK, as I'm now on garden leave after being made redundant at work, I have some time to start doing kitchen chemistry and want to make the flax gel.

The online shop I'm planning to buy ingredients from has two kinds of citric acid and two epsom salts - which do I need?

Citric Acid Granular Fine (monohydrate) OR Citric Acid Powder (anhydrous) - I'm guessing the second so it won't be gritty?

Epsom Salts (BP Grade) OR Epsom Salts (heptahydrate) - I'm guessing the second is fine if I don't plan to eat them?
