Sun Dried Tomato Quick Bread from Paula Deen
1 3/4 C all purp flour
1 C feta cheese
1/4 C chopped fresh basil (FRESH!)
1/4 C chopped sun dried tomatoes packed in oil
3 T sugar
2 1/2 t baking powder
1/2 t salt
1 large egg, lightly beaten
3/4 C whipping cream
1/3 C sun dried tomato oil
Preheat oven to 400.
Lightly grease a 9x 5 loaf pan.
In a large bowl, combine flour, feta, basil, tomatoes, sugar, baking powder, and salt.
In another large bowl, beat together egg, cream, and oil.
Stir the flour mixture into the egg mixture until just moistened.
Pour batter into prepared pan.
Bake for 35 minutes or until a tooth pick inserted in center coems out clean.
Cool in pan for ten minutes then remove to wire rack.
Then there is some nonsense about letting it cool completely but who does that? Bread is supposed to be eaten warm. With butter. Humph.
I made this a few years ago for a Christmas brunch and it didn't last ten minutes. Now I make at least two. Big hit. Do not try to sub anything to reduce the fat or calories, you'll ruin it.
