My hair's properties are very different from yours, but my guess is that no-poo/low-poo would probably work well with coarse hair. You are probably right about protein- coarse hair generally does not like protein, but protein is beneficial for high porosity hair, so you might want to consider trying a bit of protein followed by lots of moisture (even with my fine hair texture I always follow protein with moisture).
When you decide to try CG, make sure that you do a final wash with a sulfate shampoo. Make sure the shampoo is cone-free. A couple of products that you might want to look at (I'm not listing anything that I know to be protein heavy, but unless the word "protein" is actually in the ingredients list I might have missed something)
I would try Tresemme Naturals. There are a lot of people who use Suave Naturals, but I heard that Suave has more protein
Garnier Fructis Triple Nutrition is absolutely amazing- great moisture and great slip.
I use my RO as a leave-in (I scrunch a bit back into my hair after I've finished rinsing)
I'm very unsure of which gels have more protein than others, so I'll just list some drugstore brands that I know are popular here:
LA Looks (I think all are CG, Sports Gel is very popular, but I also like Nutra Curl)
Herbal Essences (Totally Twisted or Set Me Up)
Garnier Fructis Pure Clean
I would also recommend doing a deep conditioning treatment at least once a week to get some moisture back into your hair.
