What kind of product to achieve this look?

I have been growing my hair out for the first time since i was little. It's straight when short but gets very wavy/curly when growing longer and I used to hate it. However, I have been learning how to take care of it and what products to go for/stay away from and I'm starting to love my hair. This is the hair I want to go for but I'm not sure how to style to get it like so- I also posted a pic of my hair (I know it needs to be a bit longer, I'm growing it out still). I like how the waves just all lie nicely and it's sort of messy but very put together at the same time.

Leave in or soft hold gel? A jelly product or creme might give definition without crunch, instead of a gel. I'd experiment and see what works for you. You could try a bit of a regular conditioner as a leave in.
What is your present routine? I wouldn't be a bit surprised if you found that you could get that look without changing a thing (except the length of your hair). If when your hair is the right length, you need more hold try a stronger gel than you are presently using. If you need a bit more curl definition, use the scrunching technique to increase your curls. If you aren't familiar with scrunching, check out the techniques in the Newbie section.

Experimenting with too many products to name here. All this great info keeps my head spinning.
my hair is very thick and it just sort of poofs up regardless of the products i try. When I style it wet or damp, I like the look I get but when it dries up it just poofs up and the curls go wild. ive tried various pomades and creams and cant get something with a strong enough hold to get me to manipulate my waves but not make my hair crunch or hard. maybe if i just grow it out the weight of the curls will help it fall but im not sure

Then I blow dry a bit with an ionic blowdryer with diffuser to tame it a bit or else it will just poof up when air drying. Then is the step which I am trying to perfect which is styling it- I know people say to style wavy/curly hair when it's a little wet but my curls just frizz up when it completely dries and it doesn't look good. I know I have similar hair as the pics above but just can't seem to get a similar result.

I would try a gel. Something with a strong hold. My hair poofs if I don't use a gel. I like LA Looks Sport Gel. You may have to play around with the right amount to not have that crunchy look but you can always scrunch that out once it dries.
Try adding a bit of leave in conditioner to your routine. Many gels scrunch out easily and using one that works for you might help. Also, what is the dewpoint/humidity where you are? That has a lot to do with which products work best and what frizz you can expect.

I'm not a dude but my brother has hair similar to yours, and I have helped him with his a bit. He has tried a product called Layrite by a company called Hawlywoods (http://www.hawleywoods.com/) with great success. It behaves like a waxy pomade, but it is completely water solueble. When used on straight hair, you can get an amazing pompadour (the rockabilly guys love it). On curly hair it gives a nice wavy look.
You can't stop my happiness 'cuz I like the way I am! -Hairspray
Dangerously open to product suggestion
3b, thick, angled bob, coarse, low(ish) porosity.
Favs:
Poo (when I get buildup): Bumble&Bumble Curly Shampoo
Lo-poo: L'Oreal EverCurl Cleansing Conditioner
LI: Aveda Be Curly Prep
Stylin': Aveda Be Curly Curl Enhancer for a natural full-bodied look, SheaMoisture Smoothie for finger curls.

Hm... They have an original strength hold and an extra strength hold, and it gives very good definition and shine, but you may not be happy with the texture. It was not exactly stiff in the way that gel gets stiff, but much more like a hair wax, if you have ever tried anything like that. They do sell small containers of the stuff, you might get one and see how it works. Btw, it smells amazing, like cake batter.

I second the gel if you want to avoid poof and as raindear said, you can always scrunch or pat out the crunchiness after your hair has dried fully.

Also, to get his clumps you might have more luck if you use the gel on really wet hair and skip the hairdryer as that might just break your curls/waves up.

Jewelcurls pomade looks good too..

Have you ever tried a mousse in your hair? I use the Pantene curly hair mousse(pink can, strong hold) under a LI and it gives me hold, with a little crunch that can be scrunched out. I put the CK coil jam on top with great results- it boosts curl and kills frizz! My hair is a lot longer than yours, but it would probably work the same. Just a thought, but sometimes mousses work better with hold/not as much crunch than gels. I would try a strong hold gel, there are some with really strong hold. If you do strong hold+leave in it might really get you what you are looking for. Try applying whatever products on soaking wet hair rather than damp. It makes a HUGE difference!! There is not nearly as much crunch, and a lot less frizz. Anyway trying a mousse or a really hard hold gel over a LI might just work great.

i think if i let my hair air dry the curls on top would be too tight to have this look- his seem to be almost even straight up there as they just lie down and don't really curl up
Grow it out a bit more..put in ur gel..finger curl it.
if ur curls are too tight, u can always use rollers to stretch them out a bit.
