Question To much protein? Not enough?

So I have been getting great compliments on my hair. Never in my life have I ever gotten compliments on my hair before. It feels softer than ever and for the most part I'm happy with it.
Only problem I am having is I can't get decent clumps. I get these stringy little curls and waves. Air drying or using a diffuser. Only difference is with the diffuser it has more volume. Could this be just how my hair is? I noticed my Ion conditioner has protein so I was thinking maybe my hair doesn't like it. But wouldn't my hair not be so soft if that was it?
How can you tell if you are over conditioning or if you are using to much protein?
