Default Which ingredient/s "thickens"?

In "thickening" shampoos, conditioners, or stylers, which ingredients are thickening the hair?

Generally I'd think proteins, which basically reconstruct the hair shaft. However, if you have normal to coarse textured hair it's best to avoid tons of protein.
