I am going to Cassvile MO next week and am from CA. I'm only a few months in to CG and I have NO idea how to manage humidity as I haven't had to yet.

Fine 2c/3a med porosity no color treatments

Currently:
CJ daily fix (sometimes CJ Gentle cleanser)
CJ Strengthening condish
CJ Curl fix (as LI)
CJ CCCCL
CJ Curl Queen

Microfiber towel scrunch then air dry

Should I change anything or change how I dry/style??

Try sealing yout hair with oil (argan oil, sweet almond oil, grapeseed oil, or any other light oil) after you've applied your leave-in but before any of your stylers. Watch out for humectants (ingredients that, in humidity, pull moisture out of the air and into your hair, making it poof out). Glycerin is a common one. Check your products and avoid any with glycerin high on the ingredients list. I'm sure your hair will look lovely no matter what

^^+1 that sounds like a good plan. Make sure your hair is well moisturized before the trip by doing a DT. The better moisturized your hair is, the less it will react to the humidity.
