So excited! Made a perfect batch of okra gel today!
 
Edited 8/20/13 to update with my favorite, basic recipe.

I added 2 Cups frozen sliced okra to a pot of 3 1/2 cups water and 2 T marshmallow root (optional). Cooked on med-low for 45 mins (slow boil), stirring occasionally.

I strained the liquid with a mesh strainer and added 1/2 t of xanthan gum to thicken, and mixed with an immersion blender. If you want it thicker, add more slowly. I like mine more runny.

This yielded about 1 1/2-2 cups, though I didn't measure it....

I let it cool a few minutes, then whisked in these add-ins;

1/4 t citric acid (to reduce PH- available at health food stores)
1/2 t agave nectar (for hold- available @ grocery store, in the sugar aisle- you may need more or less, so you'll have to play with the amount)
1/2 t grape seed oil (any oil will work)
8 drops of vanilla fragrance oil (you can use any fragrance or essential oil for scent)

**ADD PRESERVATIVE (IF DESIRED)- PLEASE USE PACKAGE INSTRUCTIONS OR CONSULT THE WEB FOR DIRECTIONS. Each one is different. Potassium sorbate, for example, should be added to the gel at 60 degrees OR LESS (so refrigerated for a few minutes first) and also should be disolved in a solution before adding. I have also ordered Germall Plus as a more well-rounded preservative to use next time. Refrigeration is required without using a preservative!

Wow so detailed, thank you!! I really want to make some okra gel myself. I will try your recipe first. Only I will add more agave (if I can find mine) or use honey and I have some Optiphen I will use to preserve. Thanks again!!

Wow that sounds so complicated! Are there any easier ways to make it? I would like to try it, but I have no idea where I could get many of those ingredients. I live in holland and have for example never heard of marshmallow root. Ive put it trough a translator but still do t have a clue of what it could be. Can't really find it on the internet either. What are the essential ingredients I would need for it?

Frozen okra
Water
Thickener (xanthan gum, guar gum, cornstarch)
Oil (grape seed, jojoba, sweet almond, etc)
Agave nectar or honey

Decided to do a basic version because I was too impatient to wait to go to the store ;) liking it so far but waiting for it to dry all the way. Topped it with some gvplsg and hesmu because I am visiting an old friend and want to make sure it's not frizzing lol. May try it alone tomorrow. It came out pretty runny so will have to boil the next batch a bit longer. Picking up a thickener today too. Corn starch didn't do much. Think I can find marshmallow at whole foods?

I think with okra gel, you HAVE to use a thickener, it just doesn't get as thick as FSG no matter how long you boil it. At least, that's what I've gathered from the posts I've read here. I'm not sure about MR @ whole foods- I don't have one here. Plus, I love online shopping, so if I can order it online I don't bother looking for it on the ground, lol.

Looked on I herb and all I saw was a pound bag. Seems like a lot. Does the liquid work or maybe the capsules?

I don't know about the liquid or capsules, but yes it's a big bag!

I'd only use the herb. Here's a place you can order smaller amounts Bulk Organic Herbs and Spices You can get some other things, too.

Does anyone know if adding a thickener will give the gel more hold? I started with 1/2 teaspoon of agave nectar but it wasn't enough. Last time I used 1 tablespoon and it made some of my hair sticky.

I have read that thickeners DO help with hold too. I think the 1/2 teaspoon of agave I used isn't enough. For my next batch I think I'll use 1 teaspoon, I loosely based my measurements on Kathy Mack's FSG recipe, but she adds those amounts for EACH CUP of finished gel, before ingredients, so I probably should have doubled mine although it works just fine.

I added more agave to my batch today and it is holding better. I changed my recipe above.

I got some xantham gum this weekend but all I could find for marshmallow was the capsules. Gave it a shot anyway. Just broke open a couple in the water with the okra. Seemed to work fine but I just got globs in the gel from the xantham gum. I don't have an immersion blender to break those up (on my wish list for sure lol) I am going to try to strain the clumps out and give it a shot. Any ideas how to get it in there without having chunks? I even tried to dissolve it in water first and still lumpy

This is exactly how I've ruined multiple batches of FSG and okra gel. Xanthan, IMHO, is hard to use.

One time, I got it to work by adding it as soon as I strained the liquid, while still really hot. I had my hubby sprinkle it in really lightly while I whisked like a crazy woman. But I still had to re-strain; there were a few little clumps.

The immersion blender works best so far. This last batch, I blended right after I strained and added the xanthan gum, while hot. THEN added the rest of my ingredients. This helped a lot with the air bubbles/ foam from the blender.

Do you have a hand mixer? Like the one with two wisks with a handle you turn?

Or a regular blender?

I'm going to experiment with adding some of it while its still in the pot boiling and see if that works. Although it may make it difficult to strain.

Yea, I tried to mix it water first and ended up with one big blob!
