Is sorbitol a filmy ingredient?

I've been looking through the ingredients list of many gels I've tried and hated and I'm finding sorbitol is a common ingredient. When sorbitol is in a product my hair feels gunky, as if something sticky dried and the crunch is the kind the doesn't scrunch. It's like a glue crunch. You have to forcefully pull the hair apart.

Am I accurately attributing that to sorbitol? It's described as sugar alcohol. It seems to make sense.

Sorbitol is also a humectant, so if you're using it in high dews, that might also be a contributing factor. SORBITOL || Skin Deep® Cosmetics Database | Environmental Working Group

No, I live in very moderate dews.
