How long did it take for your hair to get used to less shampooing?

Hi!

So, I've been through hell and back this summer with my 2a, fine hair (it was way over-conditioned but its returning to normal now!)

Anyway, about 3 weeks ago I started only washing my hair every other day (with Loreal EverPure Moisture--sulfate free) as I had been washing everyday for the month before that with a keratin sulfate shampoo to combat the over-conditioning. (I switched to Burt's Bees Very Volumizing a few days ago because I noticed that I needed more protein but its sulfate free as well)

But despite having done this method for ~3 weeks, my hair is still flat and oily at the roots! Is this a normal amount of time for my hair to adjust to less shampooing and no sulfates? How long might it take for my hair to "regulate" itself?

(If it matters at all, the conditioner I use is John Freida Luxurious Volume!)
When I started using a non sulphate shampoo it took me several months to stretch washing between 1 to 7 days. I did it gradually so I still felt comfortable with my hair.

I suppose I'm just confused, because I did this last summer as well without any issue but now that I have to do it again, I'm having problems!
Were you using the same products last summer that you are now? I'm sure some people have great success with the l'oreal products, but I seem to have talked to a lot of people who are having trouble with them recently.
2c/3a, dense, fairly coarse, normal porosity and elasticity, bsl curly, WL wet
Low poo: Giovanni 50 50
Co-wash: down under naturals, tresume naturals
RO: AOHR
LI: Giovanni Direct, Desert Essence curl cream
Stylers: kccc, HE smu, brhg
Oils: coconut, argan or evoo
I was using the Loreal shampoo last summer but a different conditioner (another loreal one…triple repair or something?)
Do you put conditioner on your scalp?

I never really had an adjustment period, both when I went from sulfates to sulfate-free shampoos, then from sulfate-free to cowashing. I actually find that it's way easier for me to stretch washes being CG. Sulfates actually make me more oily, scalp and skin. (I now use CeraVe moisturizing cleanser for my face, which is basically cowashing my face.)

Anyway, have you moved since last summer? Maybe water quality is different? Maybe buildup?
fine - low/normal porosity - medium density - normal elasticity.

Cowash: Cure Care diluted with water 1:1
RO: Cure Care, V05 Kiwi Lime
Styler: UFD CM (old formula), FSG + CNPF
PT: IAgirl's gelatine

Experimenting with: no guar hydroxypropyltrimonium chloride, gelatin gel

Recent findings: my hair likes Cure Care diluted with water as a cowash; does NOT like guar h.c.!
