I have been storing my honey in a plastic organizer and noticed that the honey was turning into a sugar like consistency. Is it supposed to get like that? I've got about a third left after having it since July. I do use it often but as you can see i use it sparingly. Not sure if i should toss it and get a new one. Del2c, I consider you the honey so hopefully you know! Thanks!

This usually happens when the honey is heated, but no- it isn't "bad" per se. I mean, it's still edible, just changing from liquid to solid as it gets older, forming crystals.

Here's something I found that may help:

How do you liquefy honey that has crystallized?

Set the jar of honey in a pan of warm-not hot-water until the crystals melt. To prevent crystals from forming, store honey in a tightly-covered container in a dark, dry place at room temperature. Freezing or refrigerating honey will speed up crystal formation.

I think honey is one of those things they found in the Egyptian pyramids that were good after all those years. BB told you how to restore it.

Funny, I was just digging through my cupboards looking for some honey and found some, but the honey had turned dark brown (it was the honeybee kind that's usually golden). I tossed it- didn't want to take the chance. I thought it was pretty strange though- I thought honey lasted forever, too! Oh well, I wanted to get some raw local honey anyway so I'll be picking it up at the natural food store tonight!

Honey doesn't go bad. It's actually antiseptic.

Looks like I'm LATE! Sorry! you got your info though I still use my honey when it gets like that I melt in the microwave or if the water is hot enough it just melts in the cup. No biggie and NO I'm not the Honey expert I just LOVE Honey
