When mine is overconditoned, it's dry and lifeless -- curls go away and wild frizz comes in.
I am having this problem now, actually.

I can tell I have been using conditioner too often when my hair starts getting limp and hangs there like an awkward curtain. My curls loosen, and my hair sometimes looks a little dirty. I usually just do a low-poo and let my hair rest with the conditioner for a day or two.

I'm a hair minimalist: the less time I spend on my hair, the better.

Overconditioned hair is also super soft when dry and mushy when wet. The curls can be fluffy and frizzy but hair shouldn't be dry.

If it is dry and frizzy and looks puffy, then it could be product suffocation that is not letting moisture in--this tends to be worse on hot humid days.

If I get over-conditioned, I just keep rinsing every shower -- no cond.
Over conditioning is when you apply too much conditioner and your hair becomes 'over-moisturised'. You'll notice that the curls are looser, fuzzy and baby soft most of the time. They look dry but are completely the opposite. Hope I helped =]

I can tell by the way my hairs feels (gummy, coated) and way too frizzy. My best routine right now is low-pooing every day followed by a condish. Then I apply a leave-in (most of the time) followed by a styling gel (all the time). I've actually been having some great hair days lately since I started using a protein-rich conditioner (Joico K-Pak generic at Sally Beauty). I will rotate this conditioner with some of my many others throughout the week. This made a world of difference as well as the low-pooing every day. Although, I have been able to get some 2nd day hair where I didn't need to do anything else.
