Lack of volume at the roots - No idea how to style an up-do

I am so insanely frustrated with my hair and I am about to cut it all off! I am hoping someone here can give me some tips and helpful hints.

I shampoo my hair just about every other day and don't pay attention to what is in any of the products I use. Maybe this is the source of my problems, however my curls look fabulous and I've got great shine and my hair is very very healthy. I think I'm in the "3" catagory of curly hair - my hair is very curly and very fine. It's about mid-back and shorter in the front and on top. I'm desperately trying to grow it as long as I can possibly get it(because it looks so beautiful!!) but everytime I do this I lose any and all volume/curls at the roots!! I use mostly Aussie products - sometimes tresseme, Aveda and pantene. I plop my hair and have to diffuse it otherwise it's a big frizzy fro. I apply liberal amounts of mousse at the roots when my hair is wet. I've tried root boosters, gels and hairspray however none of these things help my roots get a lift. When my hair is shorter it's great, however the longer the length the more the roots get weighed down(which I realize is probably normal, however theres GOT to be SOMETHING I can do)

Do any of you watch Lost? Do you know the character Hurly? Well I feel like the shape of my hair looks like that!! It doesn't matter how many times I try getting layers cut at the crown, my long hair just does not want to curl or bounce or do anything at the roots other than just lay as flat as humanely possible!

My other question is this - do any of you find it hard to style your hair in an "up-do" that consists of more than a pony tail?? You would think this would be easy to do since the curls have so much body, however I find this practically impossible. Does anyone know where I can turn for ideas and advice on doing my hair up in a cute naturally messy looking way? Whenever I try, it just flops to one side or falls out all over the place.
