Coconut oil doesn't contain protein, it prevents protein loss in hair if I remember correctly.
Coconut milk is protein rich.
Have you tried the oil on dry or moist hair? And how much did you use?
Are you sure your hair is course? Some people (certainly when starting NC) confuse course hair with low porosity hair. Knowing this about your hair (fine-medium-course) is even more important then knowing any other properties.
Reading your story I think your hair might be fine in stead of course. Here you can find a lot of information about hair and hair properties:
