Now I want lemon bundt (minus almond...not crazy about almond in my bundt).

I've decided that I'll never get down to my original weight, and I'm OK with that--After all, 8 pounds 2 oz. is just not realistic.
It's almond meal, one of my favorite things. It just makes for an extra moist, tender texture and slight nuttiness. Love almond meal! Think linzer cookies/bars, linzertorte, and Mexican wedding cakes/Russian tea cakes.

I've had a bit of a sweet tooth this month. Well that and an odd craving for Caesar salads, but I digress.

Yesterday I made a simple apple cake.

Hello sunny lemony goodness!
Because this cake is made with the one bowl method of mixing instead of creaming, it's got the characteristic melt-in-your-mouth tenderness and butteriness that creaming just can't equal. Plus one bowl method is faster.

Last night my son asked for cake after dinner! Which made me laugh since 99% of the time that he eats dessert it's fruit and because I felt someone else appreciated my baking too

My daughter gave us brownie mix in a jar for Christmas, which they measured and mixed at school, and today she baked them for us. They have chocolate chips, which I never add, even though they're so good.

ETA Make that an apple walnut galette with caramel sauce. I may eat the entire thing.

I made some ooey gooey cookies tonight. They're a basic dough but with cream cheese. Super soft yummy cookies

Homemade nutter-butters:

I love yesterday's brownies baked in my mini-muffin pan. Somehow they seem less fattening than a pan of brownies I would have to cut up. But if I eat five of them . . . oh dear!

I also baked homemade granola today. I can eat it as breakfast, a snack or dessert!
I'm a little obsessed with granola and yogurt and as soon as what we have is used up I'm making my own. Yum.

Tonight my dessert is a ferrero rocher...or two.
