Mushrooms

Do mushrooms have any nutritional value? They just seem to be mainly water. There's got to be something else in there, hasn't there?

Commercial mushrooms probably have less but wild mushrooms certainly have nutritional value. Nutrition Facts and Analysis for Wild Mushrooms
I spent many a fall day in childhood hunting mushrooms with my dad. I can still taste them.
But I'll eat regular old white mushrooms anytime without worrying about nutrition. They are low in fat, low in sodium, and taste good!

I read a study once about how some types of mushrooms fight off bacteria or something like that. It stemed from anthropologists finding healthier and older looking skeletons in the ground of populations that were known to eat a large percentage of them in their diet. They did modern day studies after that one too.
Shiitakes are supposed to have a bunch of vitamins and minerals, plus something that boosts the immune system. I think there are other mushrooms, espcially wild ones, that also are nutritious.

We have woods in front of our house that have good conditions for mushrooms. We've gathered chanterelles, porcinis and hen of the woods there. Our neighbor's oak tree has chicken mushrooms around it every year, and we find giant puffballs locally as well.

Portobellos are great in vegetarian and vegan wraps.

See, cauliflower mushrooms that we worked with looked like actual cauliflower (well, kind of). They were very pricey!

I think of these when I think Hen of the Woods:

Chicken of the Woods mushrooms look so cool, by the way.
