I can't vouch for this cake because I don't like pumpkin (LOL) but the rest of my family raves about how easy and good it tastes!

PUMPKIN CAKE

1 large can pumpkin
3 eggs
1 c white sugar
1 12 oz can evaporated milk
1 tsp cinnamon
tsp each: salt, ginger, cloves

Mix together and pour into greased 9 x 13 pan.
Topping:
box Spice Cake Mix
to cup chopped pecans (or mix with some walnuts)
Margarine

Sprinkle the spice cake mix over the top of the mixture in the pan, then
sprinkle the nuts over top and dot with margarine.

Bake at 350 for 1 hour.

I already have a pecan pie (store bought) and many other desserts planned, but I keep looking at this one
Mini pecan phyllo tarts because it looks so darn easy.

Holy crap that looks good, I want to try it. What type of rum did you use? I wonder if it would be better with light or dark.

I used dark rum, extra proof. The rum flavor was a bit overpowering while still warm, but once it cooled it was delicious!
