Where's Thelio? I scraped and boiled a vanilla bean in last night's batch and it totally tastes weird now. And I'm waving my fist at whoever suggested maple syrup, too! Or maybe my maple syrup was rancid? grrrrrrr Never mind. It's prly my fault; I got heavy handed w/ the dried fruit.

Oh well, it's only $2.50/box so I can try again tonight

Tonight will involve cinnamon and nutmeg. (hmmm do I know what cardamom tastes like?)

Now I want to make oatmeal raisin cookies!

cardamon is in chai tea.
I make it in the microwave with milk. Then mix in dried cranberries or chocolate chips. Sometimes both.

Word of warning in that that type of baked oatmeal is very popular, but for me that's the type of baked oatmeal I can't eat. It's practically dessert! At that point I'd rather just eat a fruit crisp. If you don't have a major sweet tooth and you can't abide a ton of sugar for breakfast, you will not be a fan.

I go for a lot less sugar and butter, plus I like fruit in there.
I also find most baked oatmeal dry instead of the creamy, custardy ideal, so I add more egg and liquid.

Heidi has a good one except for way too much cinnamon and the usual baked oatmeal dryness I don't like:

This is a favorite baked oatmeal around here and I make it quite a bit. I usually have it with a little milk and a tiny bit of maple syrup. Most of the time I mix it up the night before so all I have to do in the morning is let it sit out while the oven preheats (I'm paranoid about putting any type of baking dish in the oven straight out of the fridge) then enjoy my coffee while it bakes.

I've decided that I'll never get down to my original weight, and I'm OK with that--After all, 8 pounds 2 oz. is just not realistic.

I think I will try to swap out the milk and replace it with water and use half brown sugar/half suclaose.

And I will add flaxmeal and use teel cut instead of rolled oats.

I use unsweetened vanilla almond milk and it works well. I'll be interested to hear how the steel cut turn out in that since they cook differently and are much chewier. The rolled oats are more of a custardy/slightly crunchy texture that I like.

yeah. i should had mentioned its sweet and use unsweetened alomond milk. I plan to twink the recipe so its less sweet but still yummy. i will be keeping th same about of butter.

spring I will try your recipe minus the bananas. I dont like them.

breakfast was very filling more so than regular oatmeal. i'm usually starving by 10:00am and i eat breakfast by 7am.
I was thinking of leaving out the banana next time just because I'm kind of tired of it (we've eaten it every weekend for the last several weekends) and maybe adding a little applesauce just to take place of the moisture the bananas would add. The blueberries stay because I can never get tired of those.

Baked oatmeal sounds like flapjack. Is is the best food ever.
