I was just thinking of making delicious egg salad the other day.
Heck, spring, I'm just happy you know that they are over-cooked if they look a certain way. It's the idea that people may never know not to over-cook and why their eggs are olive-green that is so painful.
Lots of people struggle with rice. But it practically runs through my veins. I could cook it in my sleep. How could I call myself Dominican otherwise? I'm already on shaky ground with the dancing.

The problem is I hate the boil in bag rice. I used it for a few years when I first started cooking and it just doesn't have the right texture for me. I want it sticky.
It's not just white rice either...I can't cook any of it. I'm so ashamed. If I don't get it right how will I ever pass on my Grandmother's wonderful pilaf recipe???

Wait, you want it sticky? Unless you're cooking porridge or actual sticky rice, rice being sticky is a no-no. It's supposed to be fluffy, with separate grains, especially for a pilaf.
If you want sticky rice, buy sticky (glutinous) rice.

The quick and homey mac n cheese is the recipe I use now to whip up a quick batch and it's really good. I use half and half and add more than 2T though and maybe a little more cheese and some hot sauce. It's so quick it's dangerous. BEWARE!!
I've made my fair share of boiled eggs with the green hue to them back in the day. I can thank the internet for slowly teaching me how to cook.  Food blogs have changed how I cook, for sure.

I'll look for sticky rice. I honestly can't even get it to be fluffy. I seriously fail every.single.time. I've read tips and tricks and nothing. I even make SO put it in the rice cooker because it comes out better. It's like I'm cursed.
At least I can boil eggs though

If you cook rice in a lot of liquid you'll end up with stickier rice, but like I said, that's not supposed to be something you actually want!  For Dominicans, that only flies if you're making asopao (soupy rice). People tend to struggle with rice precisely because they can't achieve fluffy rice and cook sticky paste instead.
I cook glutinous or also sushi rice the way I cook my other rice, but of course it's sticky rice, so it's pleasantly so without being mushy. Asians tend to steam it after soaking it.

I just read to use a heavy-bottomed pot. Does that help? I have one but it's a huge stainless steel so I only use it to make large batches of soup and such.

Dominicans cook rice in cheap aluminum pots (Imusa brand). It really doesn't make a difference except that the aluminum ones tend to give better concon (the crispy, golden rice that sticks to the bottom of the pot). I cook rice in whatever pot is available. I've cooked it in hotel pans that I put rice in, poured boiling water over, covered, and stuck them in the oven. I've cooked it in huge heavy rondeaus. It's just technique.
