I used some bittersweet chocolate I had around (I'm not too prone to eating chocolate I have sitting around), finely chopped.
You need 1/4 cup starter at 50% hydration.
It's much easier than it looks. The hardest part is having the starter and then waiting. Plus doing a lousy job slashing so you have no lovely grigne.

Well, I never have chips around. Strictly feves or blocks of chocolate. If a container of feves is almost finished, then I might nibble on them, but it doesn't happen that often. Plus I just don't care that much for chocolate. I like it well enough, but I rarely crave it. That's why it's odd that I've been on a bit of a chocolate baked goods streak of late. I do tend find chocolate cakes extremely satisfying though. I'm just much more likely to favor butterscotch pudding over chocolate pudding, a lebni tart over a chocolate one, the flavors of butter and citrus, and fresh fruit. Chocolate hardly ever registers.

I adore butterscotch, and feel it's greatly neglected these days.
But chocolate is.........a dietary staple.

Well, duh! I thought everybody knew that!
I have chocolate in the house at all times. Usually bars of bittersweet, sometimes with the addition of almonds and sea salt, almonds and dried cherries, or plain. I have to hide my stash from hubs and the kids though. We're all chocoholics but I do reserve the GOOD stuff for only me.

See, I only keep chocolate for baking around, so I'll never have something like chocolate with almonds. Thankfully I don't get hit with cravings for it either. Basically, I like chocolate, but I like other things much more. Like butter. And dairy (chocolate souffle is good, but I'd rather have a sweet quark souffle). And coconut. And rhubarb (it's in season now). And caramel as a flavor (caramel pot de creme beats chocolate). And spices. Berries. Stone fruit. Citrus. The list is long before I get to chocolate. Don't faint, misspam.

missp, there's a character in a favorite book of mine who did what you do: hid her chocolate from her family.
I'm on a dark chocolate with hazelnuts kick lately.

I like many other things you listed, Saria, but chocolate is always #1 in my heart. And I prefer just nibbling on a square of fine chocolate as opposed to chocolate cake or pudding as sometimes those are too sweet. I like the pure taste of bittersweet chocolate. I guess the only thing that comes close is creme brulee - I seriously crave that too!

This pane al cioccolato is absurdly good. Just sweet enough, moist, gooey, and chocolatey without being overwhelmingly so. Yes, I just tried it.

I completely agree with all of this. My chocoholic friends always look at me like I have a screw loose, though...my dad claims not to believe me.  I was going to say that I could really go for some strawberries, or some raspberries, or a nectarine, or that caramel pot de creme, but then I realized I was just going to be listing every flavor profile you had already said, lol. Chocolate's tasty, but it's not craving-worthy for me, and it's not the kind of thing I tend to eat to excess. Now, when I buy a basket of strawberries at a farmer's market and make the mistake of letting myself sample it while walking, they're gone about a block later.
And season 4 sounds like too long to wait for Faith being something other than annoying...  Also, it's really weird because Angel came first and Spike isn't even around that much (so far, I'm getting the impression this changes later), but I keep picturing Spike when I see the spin-off show Angel mentioned. I also occasionally think of Spike's name as Angel and have to correct myself, though I don't do the same with thinking of Angel as Spike - likely because he's so...un-Spike-like.

Are you on season 2 or 3? If 2, then season 3 will either have you hate Faith even more, or kinda dig her. She's no less annoying season 4, but the episode is pretty good. She's not annoying on Angel (at least I find), and her episodes are good. Hell, even Willow is less annoying on Angel. And I hate Willow and Alyson Hannigan!
