Not much to it. Just balancing acid with sugar and salt.
For a simple one:
Pickled Ramps Recipe | Leite's Culinaria
Or sliced cucumbers in a mix of rice wine vinegar, sugar, and fish sauce (and togarashi, but you can of course do without).

Zuni's zucchini pickles:
Zuni-style pickles

Things like pickled eggplant you have to cook in some way before pickling. Something like onions you often pour the hot liquid over and let cool. When I did corn, you simmer the corn for a little bit in the pickling liquid and then let cool.
Pickled watermelon is pretty fantastic with fried food. It's another quickie that you just place into a cold mix.

I love a good pickle.
If you like eggplant, I think I posted the eggplant pickle recipe I used to make. That stuff is crack.
We used to do pickled red pearl onions. It was a complete pain in the ass, since peeling tiny pearl onions is annoying enough, but then there's slicing all of them on the mandoline afterwards. They were what made the chopped salad and it would kill me all the times people would order the salad without. The star anise as one of the spices in the pickling liquid is key.
The pickled pears we made fall in the crack category as well. Good in salads, with rich meat like pork belly, or in dessert. I used to eat them throughout service.

My son is morphing into a monkey. He's climbing on everything; I swear, I'm going to have a heart attack any day now. He managed to climb up into his high chair the other day while I had the tray off for cleaning...it scared me half to death when I turned around and saw him standing up there, beaming with toddler pride. I'd forgotten just how quick kids are at this age.

ETA:

If I've been emailing back and forth with an admissions person at a school I've applied at, and she keeps signing her emails using her first name, am I to assume that I can address her using her first name, instead of Ms. ____ ?

I know this sounds crazy but pack some wet mud on it. The mud draws out the poisons and really helps it stop hurting quickly. I got stung by a wasp last summer at the fair and my DH grabbed a handful of dirt, poured water on it and held it to my arm. It helped immensely!

Will the speech giver stumble in those out of focus areas Bigfoot is always photographed in?

I cannot believe you put us in this position with all the other stress we have right now. You are so self involved and self centered that you don't even give two ishts about what you've put us through. We don't live like this and this is not fcuking party central just because little ms important is in town. I can't remember the last time I was this angry, to the point I want to hit something. This should have been a happy day of unpacking but you have ruined it. Now I have to address this with you and I dont even want to look at you. YOU are NOT the center of the fcuking universe and I wish you had just stayed home. The disrespect you showed last night....I hope I can find some way to forgive you.
