It's that pretty much every place that does empanadas does them a single way, maybe changing something like having whole wheat in the dough (meh) and just coming up with a million gimmicky fillings. But empanadas are very much about the country they're from and there's a wide range of doughs and styles. It's not the same dough and some are fried, some are baked. I feel a lot of empanada places just have a very fast food chain feel to them.

I wish people would stop making wheat out to be the devil. I understand it negatively affects some people (though I think more research needs to be done when it comes to effects on people who don't suffer from intolerance or Celiac's), but really, it's getting blamed for everything under the sun when it has sustained people for thousands of years.
And that's without getting into the role that less digestible, mass-produced bread has played in terms of gluten tolerance, which like mass-produced bread is a fairly recent issue.

I read an article about "the worst food additives" this weekend and a number of them were commonly found in commercial bread. I can't help but think the unnatural additives are what's really causing the issues, not the wheat.

I originally skimmed this post cuz I was tired, so I just noticed this... I think hardly anyone would notice that it's spelled differently from my username  My username has a weird spelling and the pronunciation isn't obvious (eye-LAHN-wee)
Oh yeah, I get so annoyed that that's become the new fad. What caused that? Did Dr. Oz or Oprah do a special on it?
Genuine gluten intolerance and celiac disease are very serious conditions, and I can't stand the people who self-diagnose just to convince themselves that they're special.
EDIT: I'm not being snarky about Mad Scientist's thread. I didn't notice it until after I wrote this post.

I'm not being snarky about mad scientist's post, either. I can understand why she would feel as she does. It's just the topic brings out responses that are typical of the current trend to find a scapegoat food and self-diagnose.

Not just that, but because it's about output, and having as much as quickly as possible, commercial bread cuts down on fermentation time a lot. It makes up for it with those additives and dough relaxers/improvers. Less fermentation equals less breakdown of the grain and that equals less digestible bread.

I'm a low carb/Primal based eater but I don't consider wheat to be an enemy. Just as I don't consider soy to be an enemy. But I do consider extremely genetically modified grains/etc to be not the best things for humans simply because we haven't evolved fast enough to keep up. Which I think is one of the reasons so many people have intolerances, allergies, etc.
The way I eat works great for me so that's all that really matters to me. If something else works for others, I'm cool with that too.

SO showed up at lunchtime, home from work. At first I thought he was sick, but he was giggling and giggling …
Turns out one of his colleagues accidentally brought some pot cookies in to work and shared them around. SO ate two of them. So far he's been punchy and giggly, then he slept a bit and then he woke up and was a little paranoid. Now he's sleeping again.
He used to be a regular pot smoker, but hasn't done it in years and has never eaten it in anything. I think it's hysterical that out of the handful of people who ate the cookies, he was one of them. Of course he's always foraging for food, so I guess it's not that surprising …
I hope his co-worker doesn't get into trouble, he went home "sick" as well. He said his roommate made the cookies, who knows? It's a pretty laid-back workplace, they have Beer Fridays and stuff. So this will probably blow over. Pretty funny! This is sitcom sort of material, really.

I really, really don't want to be depressed anymore. I can't even get a waitressing job right now. I feel like all my friends are moving on and up and are far away. I feel like my mom and my sister couldn't care less about me. I am trying so hard and the harder I try to feel better the worse I end-up feeling. I feel like the biggest screw-up in the world, like nothing is ever going to get better.
