Make three-cup chicken. Basically equal parts soy, sesame oil, and rice vinegar. It must have Thai basil to finish!
Or a variation: Shaoxing wine, soy sauce, chiangkang (black) vinegar, sugar. Same idea as three-cup chicken, but no sesame oil and the wine is half the other quantities. It includes star anise and if you have it, Sichuan peppercorn and becomes a delicious glaze.
Or soy-braised chicken. Simpler in that it's just soy and water and the aromatics (star anise and cinnamon sticks in addition to the ginger and garlic).
Or a variation with orange zest and juice.
All of these are so, so good.

When we moved I had to get rid of all those little pantry items you accumulate over time and now I seem to have a brain still programmed to "Don't buy too much because you'll have to get rid of it" instead of "You've got 3.5 years to use this stuff up"

I've never seen grated ginger in a tube! I keep my peeled ginger root in the freezer and just grate it as needed.

I am going to have to add something to our menu this week that has ginger in it now that the craving has been activated. Soy sauce needs to be involved in this.

Are you trying to tell me you don't have every kind of vinegar you can get?

But you should get rice vinegar. It's a great all-purpose, mild vinegar. And you can use it if you don't have black vinegar.
Are you also telling me you don't have star anise? But how? It's like the most versatile spice ever!!!!

They're very easy to make. It's basically throwing stuff in a pot and simmering. A lot of Asian dishes are very unfussy. These are basically homey dishes. I've been making them for staff meal because they're so satisfying and involve so little hands-on work.
I have 3 vinegars; apple cider, regular, and balsamic and that's it. I have room for one more though so I'll get rice vinegar.

I'm really serious when I say my brain is set to "don't buy anything" and I can't seem to break out of it. I need to relax a little and not constantly be in moving mode. Although if you could see my slam full pantry you'd call me a liar.

I 2nd the vote for rice vinegar. I'm not a vinegar fan but if I were held at gunpoint and told to keep only one it'd be rice. Oh, what's "regular" springy? Red wine?

I guess I should have said white vinegar instead of using the word regular. I buy white vinegar by the gallon at the wholesale club because I use it for cleaning as well.

Rice vinegar is on the grocery list. Y'all are helping set me straight.

See, I'd kick out distilled vinegar in a heartbeat. All it does is clean stuff. Or maybe just keep it in the bathroom or wherever you keep household cleaning supplies.
I mean, it's alright for pickles, but other vinegars are even better for pickling.
LOL, I'd forgotten about white actually. Probably because I buy it by the gallon and keep it in the bottom of the pantry instead of on the shelf with the rest. (and I was doing a mental inventory of all on the shelf) I mostly use white to descale all the hard water buildup on EVERYTHING.

Yeah, it stays in the laundry room (I use it in the washer mostly) so I guess it doesn't count as a pantry item. This whole conversation has me wanting to reorganize my pantry.

From now on there will be subliminal buy-sherry-vinegar messages in all my posts.
I mean, balsamic is handy in that it works well in a lot of sweet applications, making it versatile. But sherry vinegar is THE ONE for savory.
Do you have sriracha hot chili sauce? Because if you're getting rice vinegar then you have to have that!

2Tbsp rice vinegar, 2Tbsp soy sauce and a smidge (I mean a SMIDGE) of the chili sauce and you've got a pretty good spicy dipping sauce.
