There might be thickener in some, but most likely it's just sugar concentration. Simple syrup is usually 1:1, but for some applications you want 2:1 or other ratios.
I share compassion for front of the house workers, but you really should talk to those of us in the back, who don't get any tips. Behind the glamour of celebrity chefs are platoons of people who might top out at $15 hour after 5 or 6 years, and many who will never take home more than $450 a week.
Thank you! It really got me steamed that Bittman had the gall to talk about the worship of celebrity chefs in terms of proper compensation for restaurant workers when trying to make his point about underpaid front of the house. GTFOOHWTBS! Gee, I wonder why cooks switch to front of the house far more often than front of the house decides to work in the kitchen . . .

I must have vanilla coffee syrup for my iced coffee, but it's not essential for everyone. Someone should try that disgusting bacon flavored syrup, I bet that mess is nasty.

x, I love that you said you're "jacked up" on coffee. Before I started the iced coffee at home thing I was just drinking hot coffee and it's 1/2 caff, but now my iced is full on and I'm bouncing off the walls in the afternoon. Jacked UP!

Yum! I made a South African Melktert (milk tart) last night, and the flavors developed so beautifully today. Delicious with a cup of coffee!

So I'm sitting here drinking my coffee, and reading all these post about coffee and then I spill said coffee all over the right side of my keyboard. Damn you!

I use sugar free vanilla syrup and go through it quickly. It's made with splenda. I wonder if I could make my own. Hmmm. I might need to experiment.
I love vanilla and got a jar of vanilla bean paste recently. I have no idea what to do with it (besides using it in place of regular vanilla extract) but I keep opening it just to smell it. I haven't even looked at the ingredients. It could be made out of vanilla beans and ladybugs for all I know. : )

I used a lot of vanilla bean paste when we lived in CT because I could find it for a great price, but since we got here I haven't seen it except at Sur La Table for a redonkulous price that I refuse to pay. It makes me want waffles.

i got vanilla agave syrup at the health food store. this stuff is supposed to be 14 times sweeter than sugar, so i'm looking forward to reducing my sugar intake. i'll let you know after i try coffee with it for the first time.

Finally my tamarind and date cake has cooled so I can give it its lemon-cardamom glaze! The smell and the wait have been killing me! I also have a slab of pork belly seasoned up like porchetta (fennel pollen, sage, garlic, Aleppo chili flakes) in the oven and why do I have to wait so long to sink my teeth into crackly delicious pork belly?!
I need to go eat at Saria's house.

All of you are rank amateurs when it comes to iced coffee addiction. I've been drinking it for years, rationing carefully so that it's something to look forward to every day.
